The ingredients needed to make Beef with Pak Choi and Ginger:
  1. Prepare 200 g thin beef steak
  2. Get 2 pak choi
  3. Make ready 2.5 cm fresh ginger
  4. Make ready 1 tbsp dark soy sauce

Beef strips and chestnut mushrooms are cooked in a miso and ginger sauce and piled onto steamed pak choi. Heat the oil in a large pan. Add the steak and brown all over. Transfer to a plate, season and set aside.

  1. Separate and wash the Pak Choi removing any dirt.
  2. Peel ginger and slice into fine strips (julienne)
  3. Slice beef into thin strips (these will cook quickly and will be tender). Drizzle with a little vegetable oil.
  4. Add beef to a hot frying pan. Keep stirring for 2 to 3 minutes.
  5. Add ginger to the pan, cooking for 1 more minute.
  6. Add a generous splash of soy sauce to the pan and the Pak Choi, stirring for 2 more minutes. They should be wilted but not too floppy!
  7. Serve with fluffy rice.

Add the steak and brown all over. Transfer to a plate, season and set aside. Return the beef to the wok with the soy and oyster sauces, and cook, stirring, until heated through. Add the beef strips and turn heat to high. Add soy sauce and oyster sauce and cook for another minute.
