In large pan or wok, heat oil on high. In a small bowl, whisk coconut milk, sugar, chili sauce, lime zest, lime juice and remaining salt until blended. Stir, then bring to a boil. Heat oil in a large saucepan.

  5. Top with green onions and a little chilli oil. Serve with rice and your choice of sides.
