  10. Make ready 3 Tbls Water (more or less depending HOW sticky you want)
  11. Take 2 Tsp Hoisin Sauce
  12. Prepare 1 Tsp Rice Vinegar
  13. Prepare 2 Tsp Sesame Seed oil
  14. Get 2 Tsp shaoxing cooking wine (Optional)
  15. Get 3 Tsp Corn Flour - mixed into Paste

Heat peanut oil in a large stockpot or Dutch oven over medium heat. Crispy seared beef is tossed in a homemade sticky & sweet ginger chilli sauce. Start off by tossing the beef strips in cornstarch. Make sure the strips are coated evenly with cornstarch.

Heat oil in pan until medium hot (about 190c).Then dust with the 2nd lot of potato flour and fry in batches. - the beef should sizzle the second it hits to oil. This should take 2 mins. Dry off on Kitchen Paper. Then Add back for 1 more min for 2nd fry to make extra crispy.
  5. For the Sauce. Add all apart from Corn Flour to a pan. And cook on a medium heat until well combined. Add the Corn Starch Slurry and stir into sauce until thick and sticky.
  6. Remove from heat and add in the beef and toss around in the sauce. it is ok if not ever piece of beef is coated.
  7. Serve immediately and HOT :)
