Heat half of the butter and half of the first tablespoon of olive oil in a large skillet over medium-high heat. Brown half of the beef cubes on all sides, and place into a large saucepan. Repeat with the remaining butter, olive oil, and beef. (στιφάδο, στυφάδο, Stifatho) Stifado is a hearty Greek one-pot stew that is ideal for a cold winter's day. Although the ingredients vary from region to region and from cook to cook, the essential ones are large amounts of onions, tomatoes, wine or vinegar, and sometimes garlic.

Instructions to make Stifatho:
  1. Cut the steak into 2 cm pieces,heat half the butter and half of the oil in pan .Brown off the meat,remive from pan
  2. Add chopped onions .the garlic and the orange rind cook until onion is soft. Stir in the all other ingredients except extra spoon olive oil and baby onions.Simmer ,covered for an hour.
  3. In the meantime heat the extra spoonful of oil, add peeled baby onions in a pan.cool until well browned all over. Add onions to steak mixture, simmer covered for 20 minutes until steak and onions well tender.Remove lid and simmer for another 10-15 minutes until thickened slightly. Romove the orange rind before serving .
  4. Serve over rice or with new potatoes.
  5. Serves 4-6 people
